From À Côté to Zuni Cafe, Liberty Ducks has long been the name in heritage duck at restaurants throughout the Bay Area.
Run by the Dynamic Duo of Duck — father-daughter, 4th and 5th generation duck farmers Jim and Jen Reichardt — Liberty specializes in a Danish-developed strand of Pekin bread for a slower, less stressful style or rearing. The Liberty flock is raised to nine weeks, compared to the traditional six-week cycle of most commercial ducks.
Sonoma County’s temperate climate is perfectly suited for this slow-growth style. Liberty raises ducks year-round, on straw litter, in an open environment with minimal intervention, including no hormones or antibiotics.
